Meet the Influencer - Ryan Briggs

Our local butcher and influencer Ryan Briggs from Briggsy's Butchers here in our HQ home Town of Jedburgh.

Please can you tell us a bit about yourself?

Hi, I’m Ryan Briggs, I’m 22 years old from Jedburgh in the Scottish Borders.

Where do you work and what is your job title?

I am the owner of Briggsy’s Quality Butchers Ltd. in Jedburgh/ Digital Influencer - Starrett UK

How did you progress to where you are today?

I started working in the same shop that I now own 9 years ago when I was 13 years old as a wash boy after school and at weekends. When I turned 16, I started an apprenticeship under previous boss Allan Learmonth. During my apprenticeship I had a lot of opportunities to compete in butcher competitions. I progressed and learned a lot from them.

I competed for Team GB in the ‘British Beefeaters’ World Butchery Competition where everyone you meet will know something you don’t, a huge support network of learning, sharing and believing in the greater good for our industry. The competition itself is conducted over a 3 hr 15 min period where each team is given a side of beef, a side of pork, a whole lamb and five chickens which they must transform into a themed display of added value products. Seasonings, spices, marinades and garnishes are allowed to be provided by the teams to finish the products, these are designed to inspire and push boundaries, but are also cookable and can be sold in a shop. You are judged on technique, skill and workmanship, product innovation and overall finish and presentation.

After my final competition in Belfast 2018 I came back to run the shop and was given free rein to take the business in whatever direction I wanted. Eventually in 2020 I purchased the business and rebranded as Briggsy’s making me currently the youngest sole butcher shop owner in Scotland.

What aspects of your job do you enjoy the most?

Product development and speaking to customers are by far the most enjoyable parts of the job and go hand in hand together as both help guide the business in the correct direction.

What are the most challenging parts of your job?

By far the most challenging part of the job is keeping ahead of the game and making sure we are progressing at the same speed as the industry.

Which one person dead or alive you would love to meet and why?

Probably have to go with Buddy Valastro because of the way he has used his business to become a tv star and then use the tv fame to grow his business into something massive and the obvious reason… I like cake!!

Tell us about how you started to work with Starrett?

I have had various samples over the years of the new Professional knife range as Starrett have developed them and I have come to really like using them. When the opportunity arose for me to give my input and be a part of the UK launch it was a no brainer. I grabbed the chance with both arms. Since then, I have really enjoyed all the doors it has opened for me.

Tell us what you think about the new professional knives range?

For me personally I find them outstanding value, very durable and reliable hardworking knives. Within the full range there is a knife to suit anyone from home use all the way through to professional use in kitchens and butcher shops. The range is extremely versatile and I can guarantee there is a knife to suit almost every user.
